In the news business, we call it “crowd-sourcing.” On RAGBRAI, it’s just part of the deal.
Grinnell College graduate Eddie Senn is handing out cards to all the pie-baking church ladies he sees along the route. On one side it encourages people to send their favorite pie recipe to him at 314 Kentucky Ave. SE, Washington, D.C., 20003.
On the other side is a chess pie recipe from his late grandmother, Carolyn Senn of South Carolina. (She got the recipe from a friend from sixth grade. It goes way back.) Enjoy . . .
Mrs. Senn’s Chess Pie
1 cup butter
3 cups sugar
6 eggs, beaten well
1 Tbs. vanilla
2 Tbs. vinegar
2 unbaked pie shells
Cream butter and sugar. Add eggs, vanilla and vinegar. Pour into unbaked pie shell. Start baking in pre-heated 300-degree oven. In ten minutes, raise heat to 350 degrees. Cook for 45 minutes.
