When it rains I welcome it and keep riding. Smells great, washes the dirt & sweat off me and the bike, and cools me down in the July heat. Take a good rain over a headwind any day.
Keep some rain gear in your camp bag for in-camp use and just get wet on the ride. Seek shelter if lightning or funnel clouds crop up, you’ll feel/hear them coming if they do. Lay down in a low ditch or hide up under a bridge/overpass as a last resort. IMO it also pays to get a weather report ahead of the next day’s riding, so you at least know what to expect.
