Hey carbo, nice to see some decent food out there.  How about tofu??

I’ll be looking for you.  Will you be roadside, in passthrough towns, or at overnight towns

Tofu, some seitan, tempeh… and brown rice.  I will be a regular.

Hey all,
We are definitely considering the tofu idea.  As far as seitan and tempeh… we haven’t though of that but it is now something that we are considering as well.  Brown rice, absolutely!  Lots of veggies (and meat if you prefer that) and lots of other delicious things!  Let us know what else you guys think if you think of anything!
See you out there, ride on!

Thanks C.R., I never heard of “seitan” so I googled it.  I just might try it!  Hey, even I can learn sometimes, LOL!!!!

Hey all,

Tofu is a go! We are still trying to figure out the logistics for seitan and tempeh, but we are still entertaining the idea.  Although our station is geared toward healthy options such as vegetarian and vegan friendly foods, we will still be offering plenty of meat options every day.  So if you do not fall into the category of vegetarian or vegan, don’t be shy, we have everything that anyone needs to replenish themselves during this long ride!

if you are deciding between just doing either seitan or tempeh, please do seitan, tempeh is a much more appealing to a very limited group. seitan is more universal and the taste and texture is much more pleasing to the general population

Hey Carbo Hut!

We look forward to seeing some healthy food out there, too!

Now here is a tough one:  My wife is Gluten Free.  Not a diet, an allergy to gluten.  Sometimes it is hard to get food that is healthy and gluten free.  Sounds like you may be hitting close with some of your offerings like the rice and meat (got to watch the spices, however).

Think you might have things she can eat?

justme, we will be offering tofu and different meat options each day but we were considering offering either tempeh or seitan as another alternative but have not decided on either yet.  Either way, we will offer more than just tempeh or seitan (whichever we decide is easiest for us to get for the week).

rhendy, with your wife having an allergy to gluten, she will find many options at our stand.  Like you said we will be offering rice, vegetables and meat, all of which are gluten free.  The ingredients and seasonings we will be using are whole foods that don’t contain gluten (except the pasta).  She should be okay no matter what, remember every day we will be serving fresh fruit smoothies as well!
As for where we will be, look for us in the meeting towns each day with a few exceptions where we will not be in the meeting towns but you can find us elsewhere along the route.
Thanks everyone for the suggestions and support!
We look forward to seeing you all out there, ride on!

Graddy’s in Carroll will have an awesome baked potato bar, loaded nachos and our very own Graddy’s All-Natural Fresh Salsa and chips.  The salsa and chips are gluten-free.  This ultra-fresh salsa which is made here in Carroll is sold throughout the midwest in Hy-Vee and Fareway Stores.  Salsa so fresh your tastebuds will stand up and dance!!!  Come see us downtown in the celebration area.  Kay

cubbies1945, carnivores are welcome! We will have meat every day, those who are vegetarians and vegans are able to opt out of the meat each day and order a non-meat option.  So don’t be shy, come and eat your share of meat and pasta every day!

Ride on!

Hello Riders!

Just a few more days, we hope everyone is as excited as we are!  Just a heads up about where you can find our tent along the route: we will be in Carson the first day, Manning the second, Churdan the third, Elkhart the fourth, Colfax the fifth, Homestead day six, and the final day (7) we will be in Wilton. Most of these (besides Homestead and Elkhart) are the meeting towns for the day.

Make sure to stop by and fill up with our nutritious and delicious food and we will provide you with a list of the towns you can find us in for the whole week!
See you out there, ride on!

Knowing there will be healthy meatless options is exciting!  Do you have green smoothies?  like with kale, cucumber and celery in with the fruit?
